YOU WILL NEED:
2 cups of all-purpose flour, sifted
1 cup butter, softened at room temperature
3/4 cup icing sugar, sifted
1/2 tsp vanilla
1/4 tsp salt
1/2 cup strawberry jam, or your choice of jam filling
Circular cookie cutter, approx. 7 cm
Xmas tree or star cookie cutter, approx. 4 cm
Rolling pin
Wax paper
Baking sheet, large

HERE'S HOW:
- Let the butter sit on the kitchen counter until it is soft or else it won't mix well.
- Preheat the oven to 160oC.
- Use a mixer and paddle attachment to combine the butter, vanilla, salt and icing sugar. The icing sugar must be sifted before adding to the mix. Beat until fluffy and light which should take around 3 to 4 minutes. Add well-sifted flour into the bowl and mix until a ball of dough starts to form.
- Now it is time to remove dough from the mixer and knead with your hands for about 1 minute. Wrap the dough ball in cling wrap and place in the fridge for about 30 minutes to allow the dough to harden for easier rolling out.
- Liberally sprinkle the countertop with flour and then use a rolling pin to roll out dough to a thickness of about 6mm.
- Using a 7 cm diameter cookie cutter, cut out the shapes. You can hand knead any remaining dough to cut more circle shapes. Cut out the Xmas tree or star shapes with a 4 cm cutter and arrange on a baking sheet covered with wax paper.
- Bake for approximately 15 to 20 minutes, or until golden brown. Rotate the racks from top to bottom about halfway through. Remove from the oven and let them cool.
- Assemble the cookie halves with a layer of strawberry jam and then dust with icing sugar.
