Ingredients
8 cups of chicken broth or stock
1 cup of milk
500g dried, split peas
500g smoked ham, cut into cubes
1 onion, thinly chopped
2 - 3 carrots, thinly chopped
2 - 3 celery stalks, thinly chopped
1 tablespoon olive oil
1 clove garlic, thinly chopped
1 bay leaf
Seasoning to taste
Directions
1. Heat oil in a large soup pot and saute onions, carrot, and celery over a medium heat. Add seasoning and saute for 2 minutes.
2. Add garlic, bay leaf, and the dried split peas, cook and stirring for 1 minute.
3. Add the chicken broth and smoked ham and bring to a boil.
4. Cover the pot and allow to simmer for about 1 hour, or until peas are tender.
5. Remove from the heat, allow for the soup to cool.
When you have sufficiently allowed the soup to cool down, add milk. Use a hand blender to create a lovely smooth consistency and serve.
