Enjoy the last days of summer with an indulgent treat that's easy to prepare and perfect for after-dinner events on the patio.

Summer is almost at an end and it will soon be time to hibernate indoors for the colder months. What better way to enjoy the last days of summer than with a red berry sundae, recipe courtesy of Le Creuset.
YOU WILL NEED:
250g fresh strawberries
4
tablespoons icing sugar
4 large stroopwafels
and 4
mini stroopwafels
160g melted white chocolate
1l vanilla ice cream
1l strawberry ice cream
1l berry sorbet
OPTIONAL: Red shimmer food colouring powder and red shimmer edible balls, to dust
HERE'S HOW:
1. Preheat the oven to 220°C. Arrange the strawberries on a baking tray and dust liberally with icing sugar. Roast in the oven for 15 to 20 minutes or until they are glossy. You ideally want the strawberries tender but not collapsed.
GOOD TO KNOW: Roasted strawberries are juicy and sweet, or you can try grilled pineapple, sticky caramelised banana or canned peaches.
2. Dip the stroopwafels in the melted chocolate and decorate with red shimmer balls or a dusting of food colouring powder. Place in the freezer to set.
3. When ready to serve, fill each mug with 1 scoop of each of the flavoured ice-cream and sorbet, dig in the stroopwafels and add a few roasted strawberries. Pour over a little more melted white chocolate and enjoy.
GOOD TO KNOW: Three scoops of flavoured ice-cream always makes for a ‘wow’ factor. Ensure each one is a different flavour to keep your palate interested. You could even try frozen yoghurt.
