Beer Butt Chicken
Nina Green - our DIY Diva for the West Rand and Pretoria - recently held a welding workshop where everyone made a 'Beer Butt Chicken Roaster.' If you've never tried chicken on the braai this way - you are missing out on some really good chicken!
Ingredients for Beer Butt Chicken
A can of beer for each chicken - your favourite beer of course!
Fresh chicken
Salt and pepper to taste
Chicken spice
10 ml olive oil
Instructions
- Rub the outside and inside of the chicken with oil, sprinkle with seasoning and chicken spice.
- Open the beer and drink half before your place the half-full can on the braai grill and slide the chicken over the top so the can fits inside the cavity. The bottom of the can and the two legs bent slightly downward form a tripod which should keep the chicken upright on the grill.
- If you don't have a beer butt grill and need to support the chicken to keep it upright, pack some foil wrapped potatoes around the chicken.
- Cover with lid if you are using a Weber and cook over low to medium heat for approximately 2 hours. Check the chicken every 20 minutes or so. If the chicken is browning too fast, cover the chicken with tin foil.
