3 tablespoons butter
4 slices thick-cut smoked bacon, cubed
2 large onions, sliced
2 deep-dish pie crusts
2 cups halved cherry tomatoes
2 packs goat cheese
2 cups watercress
16 eggs
1 1/2 cups milk
4 teaspoons salt
2 teaspoons pepper

Directions:

Preheat oven to 180 degrees.

  1. Melt butter in a medium saucepan and add bacon.  Cook on medium heat until bacon is slightly browned.  Add onions and continue to cook until soft, about 15 minutes.

  2. Divide onion-bacon mixture evenly between two pie crusts.  Do the same with cherry tomatoes, goat cheese, and watercress.

  3. In a large bowl, whisk together eggs, milk, salt, and pepper.  Divide mixture and pour into pie crusts.

  4. Bake quiches until centres are set and tops are golden brown, 50-55 minutes.
