Chocolate and Caramel Lamingtons

 

Being a Masterchef addict, I was a it confused the other night when they had to cook lamingtons. What the heck are lamingtons? So, as usual, I decided to find out.

YOU WILL NEED:

1 pkt sponge cake mix - or make your own sponge cake mix

Caramel:
300mL Nestle Sweetened Condensed Milk
2 tbsp. golden syrup
60g butter

Icing:
1/3 cup NESTLÉ Baking Cocoa
3 cups icing sugar
20g butter, melted
3/4 cup milk
4 cups desiccated coconut

 

 

HERE'S HOW:

1. Preheat oven to 180°C while you prepare the cake mix as directed on packet. Spoon evenly into an 18cm x 28cm square baking tin lined with greaseproof paper. Bake approx. 25-30 minutes until cooked. Remove from tin and cool completely.

2. Combine in pan condensed milk, golden syrup and butter. Bring to the boil, stirring constantly, then simmer 5 minutes, stirring constantly. Remove from the heat and cool.

3. Cut cake in half horizontally then sandwich together with caramel and refrigerate until set. Cut cake into squares.

4. Combine cocoa, icing sugar, butter and milk. Dip cake into icing then coat with coconut. Allow to set.
